No – Our award-winning veggie burger was created just for us more than ten years ago by Austin chef Andrew Brooks. We make every patty from scratch, daily, at our central kitchen. Our recipe features brown rice, cream-simmered crimini mushrooms, black beans, oats, two kinds of cheese, fresh-cut parsley, and a special spice blend.
After serving this special recipe for many years, we experimented with a vegan version, which swaps the dairy ingredients for DAIYA equivalents. While the vegan patty was very tasty, it tasted pretty different from the original. We didn’t want to go changing the crowd favorite (are you old enough to remember what happened to New Coke?) So, we considered offering both patties on our menu. But after rigorous testing, we found there was too much of a risk of the two patties getting mixed up on a grill surface – they’re visually identical, after all. The last thing we want to do is serve a customer something outside their diet, especially if neither they nor we could tell the difference right away.
Our compromise was to offer our vegan patties in the freezer section at Whole Foods Market. That way, we could offer a vegan product to the community while keeping our menu and service quality consistent in our stores.
